■KID Muryosan Jyunmai Daiginjyo / 紀土 -KID- 無量山 / 純米大吟醸

The Yamamoto family, the sake brewery of Heiwa, started making sake in 1928. Before that, there was a temple called Mujiyama Choganji. This liquor, which bears the name of its mountain name, Muryosan, is the highest peak of the Kid series. All of the rice uses Yamada Nishiki which is the highest peak of  Special A Chiki and the soft clean water of Kishu, the origin of Kid, and seeks the supreme taste of Kishu's climate.

平和酒造の蔵元である山本家は酒造りを始めたのが1928年。 その前は無量山超願寺というお寺でした。 その山号である無量山の名前を冠したこのお酒は、 紀土シリーズの最高峰となります。 米は全て特A知己の最高峰の山田錦と、紀土の原点である紀州の柔らかできれいな水を用い、 紀州の風土の至高の味わいを求めています。

■Heiwa Shuzo Terroir / 平和酒造の土地柄

Wakayama Prefecture is located in the south of Honshu and is a prefecture with warm and mild climate.

It is close to the ancient cultural area of ​​Kansai, and is a prefecture with a long history such as Mt. Koya which was opened in 816 AD, the Kumano Kodo of the Kumano shrine that was said to have begun around 1000 AD, and the Lord Kishu of the Gosanke family. Today, fruits such as mandarin oranges, plums, and persimmons are prosperous, and there are no fruits that are not available in Wakayama Prefecture.

Despite being in Wakayama prefecture like this, Mizonokuchi is a little special. It is a land where rice has been flourishing since ancient times. The Mizonokuchi Site in the late Jomon period proves this.

This tumulus eloquently tells that formation settlements and rice cultivation have been carried out since that time. Even now, there are many paths in the village, and a ditch for drawing water to the rice fields is stretched around that side. Mizonokuchi belongs to Hainan City today, but it is a corner called Nogami Valley from ancient times. As a cultural area, it is an area with many connections to Nogami Town (present-day Kimino Town). Mizonokuchi is a basin surrounded by mountains on all sides, so it gets cold in the morning and evening. In addition, the well water, which is the underground water of Koyasan, is abundant, and all three conditions for rice production, temperature, and abundant water necessary for performing the brewing industry are available. For this reason, nearly 10 sake breweries have been flourishing since ancient times, but now three breweries are in operation.


古代の文化圏の畿内に近く、西暦816年に開山された高野山や、西暦1000年くらいから始まったとされる熊野詣の熊野古道、 そして御三家の紀州藩等といった歴史ある県です。現在では蜜柑や梅、柿など果実が盛んで、和歌山県で手に入らない果実はないほどです。


この古墳は当時から集落の形成や稲作が行われていたことを雄弁に物語っています。今でも集落の中に小道が多く、田の水を引く溝がその側を張り巡らされています 。溝ノ口は現在では海南市に属しますが、昔から野上谷とよばれる一角です。文化圏として野上町(現在の紀美野町)に多くのつながりのある地域です。溝ノ口は、四方を山に囲まれ盆地になっているため朝夕に厳しく冷え込みます。さらに高野山伏流水である井戸水が豊富でもあり、酒造業を行う際に必要な 稲作、温度、豊富な水の3つの条件すべてがそろっています。 そのため古くから10件近くの酒蔵がひしめき栄えてきましたが、現在では3蔵が操業をつづけております。
